Recipe Ingredients for Spinach and Cauliflower Curry

1 tsp oil
12 oz onion, frozen
3 tbs thai curry paste
2 tbs curry powder
1 cup plain nonfat yogurt
2 lb spinach, frozen
1 lb mustard greens, frozen
40 oz cauliflower, frozen

Recipe Directions for Spinach and Cauliflower Curry

  1. Add oil to pan over medium-high heat.

  2. Add onion, cook for 5 - 7 minutes.

  3. Add curry paste and powder, heat for 1 minute.

  4. Add yogurt, heat for 1 minute.

  5. Add spinach (2 bags frozen), mustard greens (1 bag frozen) and cauliflower (2 bags frozen), and cook for 20 - 30 minutes over medium heat until well heated and soft.

  6. Serve with rice or garbanzo beans.
