Easy and yummy casserole - can be served as a side dish or main dish. Add some crumbled sausage or bacon substitute and you've got a great breakfast dish.

Recipe Ingredients for Spinach Casserole

30 ounce frozen chopped spinach, thawed
8 ounce Neufchatel, (light cream cheese)
1/4 cup sour cream
1/2 cup grated parmesan cheese
2 cloves garlic, peeled and minced
1/2 teaspoon dried basil
1/2 teaspoon seasoning salt
1/2 cup shredded mozzarella cheese

Recipe Directions for Spinach Casserole

  1. Preheat oven to 350.

  2. Lightly grease a 2-qt casserole dish.

  3. Drain thawed spinach.

  4. Mix spinach, cream cheese, sour cream, parmesan cheese, garlic, basil & salt together.

  5. Transfer mixture to baking dish, and cook for 15 minutes.

  6. Sprinkle mozzarella on top and bake an 10 minutes, until bubbly.
