Recipe Ingredients for Spinach Casserole

2 lb Spinach
2 tbsp butter
1/4 c whole wheat flour
1 c nonfat milk
1 egg
1/4 c parmesan cheese, shredded
1 Salt and pepper
5 Ritz crackers, crushed

Recipe Directions for Spinach Casserole

  1. Make a white sauce: melt the butter over low heat, then add flour and whisk until lightly browned. Remove from heat and add milk all at once whisking continually.

  2. Return to medium heat and cook, whisking constantly, until it thickens and bubbles.

  3. Add salt and pepper to taste. A little fresh nutmeg is nice too. Add the cheese and stir to melt.

  4. Break the egg into a measuring cup or small bowl. Add a little of the sauce and blend well. Pour this mixture into the sauce and blend well.

  5. Place washed spinach into a large bowl. Add the sauce and mix well.

  6. Turn mixture into a casserole dish coated with cooking spray.

  7. Sprinkle with bread crumbs or crushed potato chips or crackers.

  8. Bake at 375 for 30minutes or until bubbly.
