Vegetarian main dish. It calls for brown rice but I had basmati.

Recipe Ingredients for Spinach and Brown Rice Casserole

10 oz Spinach
1 large Egg, Whole
0.08 cup Organic Whole Wheat Flour
2 cup (not packed) Cottage Cheese, Lowfat, 2% Milkfat
3 cup Rice Basmati
1/4 tsp Pepper, Black
1/2 teaspoon Thyme
1 tbsp Parmesan, Grated Cheese
2 tbsp Shedd's Spread Country Crock Churn Style Soft
1 1/2 cup, chopped Onions
3 clove Garlic
8 oz Mushrooms
3 tbsp Parmesan, Grated Cheese

Recipe Directions for Spinach and Brown Rice Casserole

  1. Preheat oven to 375F; spray a 9x13 pan.

  2. Defrost spinach and drain.

  3. Mix egg, 1 Tbsp flour, 2 c cottage cheese, 3 cups cooked rice, pepper to taste, 1/2 tsp thyme, and 1 Tbsp parmesan.

  4. Heat 2 Tbsp margarine in skillet and saute onion and onion until translucent. Add garlic and saute one minute longer. Add spinach and mushrooms, cover and cook 7 minutes.

  5. Add cottage cheese mixture to spinach mixture, blend well.

  6. Spoon into prepared pan. Sprinkle 3 Tbsp Parmesan and 2 tbsp sunflower seeds on top. Bake 25-30 minutes.
