My first attempt at a crustless quiche

Recipe Ingredients for Spinach & Broccoli Crustless Quiche

1 tablespoon olive oil
1 teaspoon garlic
1 red onion, chopped
2 cups fresh spinach
2 cups frozen broccoli
1 cup, egg beaters
2 cups mozzarella cheese
3 roma tomatoes
1/8 teaspoon black pepper
1/8 teaspoon chili powder

Recipe Directions for Spinach & Broccoli Crustless Quiche

  1. Preheat oven to 350 degrees

  2. Lightly spray/grease a 9" pie plate (or 9x9 pan)

  3. Heat oil in large skillet over med-high heat. Add onions and garlic and cook until soft. Stir in spinach and broccoli (broccoli should be cooked in the microwave approx. 3 minutes.

  4. In a large bowl, combine egg beaters, cheese and seasonings. Add spinach mixture and stir to blend.

  5. Add diced roma tomatoes (remove seeds for less moisture).

  6. Scoop prepared mixture into pan

  7. Bake in preheated oven until eggs have set, about 30 minutes. Let cool 10 minutes before serving.
