LIGHT PASTRY FILLED WITH SPINACH AND FETA CHESSE

Recipe Ingredients for SPINACH BOREK

8 sheet Phyllo Pastry
1 large Egg, Whole
0.5 cup Milk, Nonfat, Fluid
2 1tsp Olive Oil
1 package (10 oz) Spinach
0.5 cup, chopped Onions
0.125 tsp Sea Salt
1 dash Pepper, Black
1 tsp Oregano, Ground

Recipe Directions for SPINACH BOREK

  1. FOR THE FILLING SAUTEE THE ONIONS & SPINACH IN 2 TBSP OF OLIVE OIL UNTIL TRANSLUCENT ADD SALT, PEPPER AND ORGANO.

  2. NOW MIX 2 EGGS, 1/2 CUP MILK , 2 TBLSP OLIVE OIL,SALT, PEPPER & OREGANOTO TASTE. THIS WILL BIND THE INGREDIENTS TOGHETHER WHEN BAKING.

  3. PLACE 3 SHEETS OF PHYLLO PASTRY IN A GREASED (USE PAM) RECTANGLE PYREX DISH, LEAVING EDGES HANGING OVER THE TWO LONG SIDES. SPOON 2 TBLSP OF EGG MIXTURE & ADD 2 FOLDED PHYLLO PASTRY SHEET FOR THE BOTTOM OF THE PIE. NOW SPOON SOME THE SPINACH MIXTURE EVENLY 7 SPRINKLE WITH THE FETA CHESSE. ADD 2 MORE TBLSP OF THE EGG MIX AND LAYER THE LAST 2 PASTRY SHEETS. ADD THE EGG MIX & FOLD OVER THE SHEETS FROM THE BOTTOM AND TOP OFF WITH THE REMAINING EGG MIX. BAKE IN 350 DEGREE OVEN FOR 30 MIN OR UNTIL LIGHTLY BROWNED. CUT INTO 6 EQUAL PORTIONS
