Add Mission 6" whole wheat low carb tortillas separately

Recipe Ingredients for Spinach & Black Bean Enchiladas (no tortillas)

8 oz frozen spinach
1 cup black beans
1 cup enchilada sauce
1 small onion, chopped
1 cup mozzarella cheese
1 large tomato, chopped

Recipe Directions for Spinach & Black Bean Enchiladas (no tortillas)

  1. Mix spinach and black beans - season with Adobo and Fajita seasoning.

  2. Saute onion and tomato in cooking spray, then add to beans and spinach.

  3. Add mixture to tortillas and roll up. Add to pyrex baking dish, cover with enchilada sauce and cheese.

  4. Cook at 350 until cheese melts.
