Quick, easy, and flavorrful soup with lots of minerals and fiber. Different kinds of beans can be used.

Recipe Ingredients for Spinach Bean Soup

32 ounces vegetable broth, no salt
1 medium onion, chopped
15 1/2 oz. white kidney beans, no salt added
15 1/2 oz. black beans, low salt (rinsed & drained)
15 1/2 oz. diced tomatoes, no salt added
2 cups water
6 oz. baby spinach, coarsely shredded
1/4 cup parmesan cheese, shredded
1 tsp basil
1 tsp pepper
1/2 cup brown rice, uncooked

Recipe Directions for Spinach Bean Soup

Mix all ingredients, except for spinach and cheese. Put in slow cooker. Cook on medium to high until all ingredients are hot. Add chopped baby spinach, and steam for 15 minutes. Adjust seasonings to taste When you serve,, garnish with the paresan cheese. and a little low-fat sour cream.
