A simple tomato soup. To get rid of the acidity of the tomatoes, add a pinch of baking soda.

Recipe Ingredients for Spinach-Basil Tomato Soup

1 tablespoon margarine
1/2 onion
28 oz crushed tomatoes
2 cloves garlic
1/2 cup 1% milk
2 teaspoons dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup spinach

Recipe Directions for Spinach-Basil Tomato Soup

  1. Chop the onion and garlic VERY finely.

  2. Melt butter in saucepan. Add onion and garlic. Saute until onions and garlic are soft.

  3. Add milk. Cook, stirring continuously, for two minutes.

  4. Add tomatoes, basil, salt, and pepper. Bring to a boil. Simmer, covered, for five to ten minutes.

  5. Put half the soup mixture in a food processor. Puree until smooth.

  6. Replace pureed soup into the rest of the tomato soup. Add spinach. Cook until wilted.
