http://recipes.sparkpeople.com/recipe-detail.asp?recipe=728015 This is a gluten-free version of the great Spinach Balls made by my friend Ruth. She uses 1/2 cup breadcrumbs for the potato flakes. Or use 1/2 c. gluten-free breadcrumbs

Recipe Ingredients for Spinach Balls

10 oz frozen spinach
1 egg, beaten
4 oz butter (1/4 cup melted, you can use vegan butter)
1 medium onion, chopped fine
1/2 c. grated parmesan cheese
1/2 c. potato flakes (gluten-free potato flakes)
1 tsp rosemary
1/4 tsp pepper

Recipe Directions for Spinach Balls

  1. Combine all ingredients and mix well. Rolls into balls about the size of small walnuts.

  2. Put in refrigerator overnight (or at least 2 hours to set). Then preheat oven to 350 and place balls on a greased baking sheet.

  3. Bake about 30 minutes, until brown on bottom. (Balls may flatten in gluten-free recipe but they still taste great.)

  4. Makes about 30 balls.
