Lightened ricotta pie with egg whites.

Recipe Ingredients for Spinach-Asparagus Ricotta Pie with Matzo Crust

1 cup bread crumbs or matzo meal
3 T egg whites
3 T water
1/2 T olive oil
1/2 c parsley
1/2 t lemon juice
1 c ricotta cheese, part skim
5 T egg whites
1/8 c parmesan cheese, grated
3/4 c spinach, cooked
14 asparagus spears, steamed
3 T parmesan cheese
1/8 t black pepper

Recipe Directions for Spinach-Asparagus Ricotta Pie with Matzo Crust

  1. Process olive oil/parsley/lemon juice to make "pesto". Combine with matzo meal, water, 3 T egg whites. Stir briskly until soft paste forms. Press into greased pie pan.

  2. Process spinach with some of the ricotta until blended. Mix together with remaining ricotta, egg whites & 1/8 c parmesan. Spoon into crust.

  3. Cut asparagus spears into thirds. Lay out on top of spinach mixture. Sprinkle with remaining parmesan cheese.

  4. Bake at 350' until set and lightly browned.
