Recipe Ingredients for Spinach-Artichoke Stuffed Shells

200 g pasta shells
28 ounce tomatoes
1 tablespoon butter
7 basil leaves
1 black pepper
2 tablespoons olive oil
3 garlic cloves, chopped
10 ounce chopped spinach, defrosted
1/8 teaspoon nutmeg, grated
10 ounce artichoke hearts, chopped
2 cups ricotta cheese
1/2 cup cheese, grated
1 teaspoon lemon zest
1 tablespoon thyme leaves, chopped
1 egg yolk, lightly beaten
1/4 cup parsley, chopped

Recipe Directions for Spinach-Artichoke Stuffed Shells

  1. Preheat oven to 375 F.

  2. Boil pasta, then shock with cold water to stop cooking. Reserve.

  3. Mash up tomatoes in bottom of casserole dish. Stir in butter, basil, salt and pepper. Set aside.

  4. Put olive oil in large skillet over medium -high heat. Add garlic and cook until golden brown, about 3 minutes. Add spinach and nutmeg to pan and cook to heat through.

  5. Transfer spinach to large bowl and stir in artichokes, ricotta, PR cheese, lemon zest, thyme, egg yolk and parsley. Fill the reserved pasta shells with the mixture, arranging them on top of the sauce in the casserole dish as you complete them.

  6. Cover casserole with aluminum foil and transfer to oven, Bake covered at 375 F for 20 minutes. Remove foil and turn over to 425 F. Continue cooking about 15 minutes more until filling is golden brown and bubbly.

  7. Serve 4 shells per person topped with some of the sauce.
