Recipe Ingredients for Spinach Artichoke Soup

1 serving Artichoke Hearts, Frozen
3 serving Cooking Stock
16 oz Frozen Spinach
8 tablespoons Light Sour Cream
1 cup (8 fl oz) Water
4 tbsp chopped Shallots
1 tbsp Olive Oil, Extra Virgin

Recipe Directions for Spinach Artichoke Soup

  1. saute shallots in olive oil until transluscent - add garlic and saute a minute longer.

  2. Add water and bring to a boil, add stock and a grinding of pepper.

  3. when boiling, add contents of both bags of frozen vegetables. cover and simmer, stirring occasionally, for about 10 minutes, or until artichoke hearts are soft.

  4. Puree in blender in batches or turn off heat and use a hand-held immersion blender. Puree until smooth - some artichoke leaves will remain a bit fibrous.

  5. Add sour cream and re-blend. Taste for salt and pepper; correct seasonings.
