Recipe Ingredients for spinach artichoke gratin

2 cups fat free cottage cheese
1/2 cup egg beaters
4 1/2 tbsp. Parmesan cheese
1 tablespoon lemon juice
1/8 tsp. black pepper
1/8 tsp ground nutmeg
20 oz. chopped spinach
1/3 cup green onions
10 oz artichoke hearts

Recipe Directions for spinach artichoke gratin

  1. Preheat oven to 375. coat 1 1/2 quart baking dish with non stick cooking spray

  2. process cottage cheese,egg substitute,3 Tablespoons Parmesan cheese , lemon juice,pepper and nutmeg in food processor till smooth.

  3. squeeze moisture from spinach. combine spinach,cottage cheese miixture and green onion in large bowl.spread half of mixture in baking dish

  4. pat artichoke halves dry with paper towels.place in single layer over spinach mixture. sprinkle with remaining parmesan cheese.cover with remaining spinach mixture .

  5. bake covered 25 minutes
