Italian-style stewed tomatoes 2 cups chopped kale or Swiss chard 2 carrots, chopped 2 celery stalks, chopped 1 zucchini, chopped 1.5 cups pasta 1/4 teaspoon Italian seasoning 1/4 teaspoon crushed red pepper flakes

1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, finely chopped (I used the minced garlic that comes in a jar)
8 servings better than bouillon
1 3/4 cups garbanzo beans
1 3/4 cups red kidney beans
1 13/20 cups Italian-style stewed tomatoes
3 cups kale, chopped
2 medium carrots, chopped
1 cup celery, chopped
1 medium zucchini, chopped
6 oz dreamfields penne rigata
1/4 tsp Italian seasoning
1/4 tsp crushed red pepper

Recipe Directions for Spill the Beans Minestrone (modified)

  1. In medium saucepan (I'd use a large one- I used one of those huge soup pots), heat oil over medium-high heat until hot. Cook and stir onion and garlic 3 to 5 minutes or until onion is translucent.

  2. Add broth, beans, tomatoes, kale, pasta and seasonings; bring to a boil. Reduce heat; cover and simmer 10 to 12 minutes or until pasta is tender.

  3. Serves: 12
