Recipe Ingredients for Spiderweb Cheesecake

350 grams Pie Crust, Cookie-type, Prepared From Recipe, Chocolate Wafer, Chilled
170 grams Butter
50 grams Sugars, Granulated
2/5 tbsp Salt, Table
600 grams Cream Cheese
200 grams Sugars, Granulated
8 3/20 oz Cream, Fluid, Heavy Whipping
120 grams Semi Sweet Chocolate Chips
120 grams Cream, Fluid, Heavy Whipping

Recipe Directions for Spiderweb Cheesecake

  1. crust:

  2. Coat a 7-8 inch springform pan w/ cooking spray.

  3. Mix cookies, sugar, butter, & salt in (medium) bowl.

  4. Pat mixture into pan, press firmly into bottom and up sides.

  5. Cover & refrigerate until ready to fill.

  6. Ganache:

  7. Put chocolate in a food processor.

  8. Simmer cream in a small saucepan, pour over chocolate.

  9. Once chocolate starts melting, process until smooth.

  10. Reserve 4 tablespoons ganache for garnishing

  11. Spread remaining ganache evenly on bottom and sides of crust.

  12. Cover & refrigerate until ready to fill.

  13. Filling:

  14. Beat cream cheese w/ mixer (medium speed) until fluffy for 3 mins.

  15. Reduce speed to low & slowly add sugar + salt.

  16. Raise speed to medium-high & beat until very fluffy for 3 mins.

  17. Whisk cream until medium-stiff peaks form.

  18. Whisk 1/4 whipped cream into cream cheese mixture, fold in remaining whipped cream.

  19. Pour filling into crust & spread evenly.

  20. Lightly tap bottom of pan on counter to release air bubbles.

  21. Place reserved ganache in a pastry bag fitted w/ a 1/4-inch round tip.

  22. Starting from the center of the cheesecake, pipe a spiral, spacing lines about 1/2 inch apart.

  23. Pull the tip of a paring knife in a gently curved line from the center of the spiral to outer edge.

  24. Wipe knife clean, & repeat every inch or so to form a web.

  25. Cover & freeze for at least 1 hour or overnight

  26. Unmold cheesecake

  27. garnish w/ candy spiders if desired

  28. serve immediately.
