Spicy zucchini that can be used in place of salsa.

Recipe Ingredients for Spicy Zucchini

1/2 c diced onion
2 jalapeno peppers
2 cloves garlic
10 oz crushed tomatoes
2 small Squash, Summer, Zucchini, Includes Skin
2 oz queso ranchero
2 T chopped cilantro
1/2 tsp black pepper
1/4 tsp salt
1 T canola oil

Recipe Directions for Spicy Zucchini

Saute onion, garlic and jalapeno until tender. Add tomatoes and zucchini. Cook for 5 minutes. Add cilantro and seasoning. Cook until zucchini is tender. Remove from head and crumble queso on top.
