Recipe Ingredients for Spicy Zucchini Pancake Burgers


Patty:
286 g zucchini
323 g onion
85 g mushroom
25 g yellow pepper
1 c egg whites

Bun/Condiments:
7 rice cakes
77 g lettuce
7 tsp kraft mayo with olive oil

Recipe Directions for Spicy Zucchini Pancake Burgers

  1. Pulse zucchini til very fine, then use a piece of cheesecloth to rid all the liquid. Place in a large bowl and set aside.

  2. Finely chop onions, add to bowl of zucchini.

  3. Food process the mushrooms and add to bowl.

  4. Mix well then add minced pepper, add to bowl then add the egg whites, mix mix mix!!

  5. Spray a sauce pan with no calorie cooking spray, turn to medium heat and add a 1/2 cup amount of the mixture .

  6. Cook until egg white are thoroughly set and cooked, flip for side to side a good 4 or 5 times.

  7. Put mayo first on rice cake, then lettuce, patty, hot sauce(I like Texas champagne!), and salt to taste.

  8. Hope you like it, i know both your taste buds and waistline will.
