Spicy Veggie Soup Recipe

Makes 10 servings



Simple and delicious. High in fiber, calcium, iron, manganese, potassium and vitamin C. Low in saturated fat, no cholesterol and very little sugar. However, the carbohydrate count is a bit higher due to the beans.

Recipe Ingredients for Spicy Veggie Soup

2 medium (2-1/2" dia) Onions
3 stalk, large (11"-12" long) Celery
2 cup Red Kidney Beans
3 medium Carrots
28 oz Tomatoes
3 cloves Garlic
2 cup Spinach
2 tsp Spices Crushed Red Peppers
2 tsp, ground Basil, Dried
2 dash Pepper, Black

Recipe Directions for Spicy Veggie Soup

  1. sweat down the chopped onions, garlic and chopped carrots until onions are translucent in a tiny bit of spray oil.

  2. Add in chopped celery

  3. add the can of crushed tomato.

  4. Add red kidney beans.

  5. Add in some crushed red pepper. A little goes a long way!! I added maybe a teaspoon or two. Add a small amount of salt and pepper to taste, and add a couple dashes of basil.

  6. Pour in some water, around 3 cups. Vegetable broth can be used if you like too. If you feel this will weaken the flavor of the soup too much, add a bit of chicken bouillon to it.

  7. bring up to a boil, stirring constantly.

  8. Add in chopped spinach. This cooks very quickly.

  9. serve hot. Enjoy :)
