This easy tortilla soup is adapted from one by Jolinda Hackett, About .com and Bush's Beans. It is all you need for a hearty dinner.

Recipe Ingredients for Spicy Vegetarian Tortilla Soup

1 T Extra Virgin Olive Oil
1/2 Onion, diced
1/2 poblano Pepper, diced
1/2 Red Bell Pepper, diced
3 garlic cloves
1 jalapeno Pepper, seeded and diced
1/2 zucchini, diced
1/2 T cumin seed
1/2 cup frozen corn kernels
1/4 cup fresh cilantro, diced
24 oz vegetable broth, low sodium, fat free
16 oz kidney beans
1/4 cup Cheddar & Monterey Jack Cheese
4 corn tortillas, halved and cut in thin strips
1 cooking spray
4 t light sour cream
1/2 avocado

Recipe Directions for Spicy Vegetarian Tortilla Soup

  1. Chop and add first 9 ingredients to pot in order listed and stir for a few minutes - until just about softened.

  2. Add cilantro, broth, and kidney beans

  3. Simmer about 10 min

  4. Meanwhile slice tortillas in thin strips, lightly spray with cooking oil and bake at 450 for about 10 min

  5. divide soup in 4 bowls

  6. top each with 1 T cheese, then 1/4 tortillas, then 1 t sour cream, then 1/8 avocado, and maybe a little more fresh jalapeno or cilantro or lime wedge.
