Recipe Ingredients for Spicy Vegetarian Chili

1 teaspoon olive oil
1 medium green pepper
1 medium red pepper
1 cup mushrooms
3 cloves garlic
2 cups tomato (canned, diced)
2 cups red kidney beans
2 cups black beans
1/2 cup bulgur wheat
1 cup salsa
1/2 cup water
1 tablespoon chili powder
1 tablespoon fresh basil
1/2 teaspoon ground pepper
1 teaspoon Italian seasoning
1 teaspoon cumin
1/2 teaspoon cayenne
1 teaspoon unsweetened cocoa powder
1 cup corn

Recipe Directions for Spicy Vegetarian Chili

  1. Put peppers, garlic, mushrooms, garlic and tomatoes in a food process and puree.

  2. Heat olive oil. Add pureed mixture and cook for 5 minutes.

  3. Add remaining ingredients, except for corn, and simmer, covered for 25 minutes, stirring occasionally. Stir in corn and simmer 5 minutes longer.

  4. Makes 10 cups.
