Vegetarian (substitute vegetable broth for chicken broth) black bean soup

Recipe Ingredients for Spicy Vegetarian Black Bean Soup

1 tbsp chopped Onions
2 clove Garlic
45 oz whole black beans (Rosarita)
1/2 tsp Spices Crushed Red Peppers
1 tsp Cumin Seed
12 fl oz Organic Low Sodium Chicken Broth
14 1/2 oz Petite Cut Diced Tomatoes
1 serving Salsa Verde (Trader Joe
1 can (12 oz) yields Corn, Sweet, Yellow

Recipe Directions for Spicy Vegetarian Black Bean Soup

  1. Brown onion and garlic.

  2. Puree two cans undrained beans with onion and garlic. Add red pepper flakes and cumin and puree again.

  3. Pour puree back into stock pan, add third can of beans, tomatoes, salsa, and corn. Simmer 20-25 minutes.
