Recipe Ingredients for Spicy Vegetable Rolls

12 ounces red bell peppers, diced
5 ounces onion, diced
8 ounces baby bella mushrooms, sliced
2 tbsp. Extra Virgin Olive Oil
1 tsp. Toasted Sesame Oil
1 tsp. crushed red pepper flakes
1 tsp. ground black pepper
2 tsp. garlic powder
1/2 tsp. salt
7 1/2 cups flour
1/4 cup powdered sugar
3/4 cup dry nonfat milk
1 1/3 tbsp. salt
3 tbsp. dry active yeast
1/3 cup vegetable oil
3 1/2 cups hot water
2 tbsp. dry basil
4 ounces neufchatel cheese
1/8 cup milk
1/2 tsp. paprika
1/4 tsp. cumin
1/4 tsp. salt
14 ounces raw spinach leaves, diced
14 ounces artichoke hearts, rinsed and diced
4 cups shredded mozzarella cheese
8 ounces swiss cheese, shredded

Recipe Directions for Spicy Vegetable Rolls

  1. Combine peppers, onion, mushrooms. Toss with olive oil, sesame oil, red pepper flakes, black pepper, garlic powder and salt. Bake in 400F oven for 2-2.5 hours. Drain (reserve liquid) and store in refridgerator for up to 3 days.

  2. Bread

  3. Combine 3 cups flour with sugar, salt, dry milk and dry active yeast. Mix. Add vegetable oil and hot (as hot as your kitchen sink will go) water. Mix. Add 4 cups of flour (one cup at a time) and knead dough until it cleans from the bowl. Continure kneading for 5 minutes. Let rise until double or triple in size.

  4. Sauce

  5. Combine neufchatel cheese (warmed) and milk and wisk until creamy. Add paprika, cumin and pinch of salt (replace spices with whatever you'd like) and wisk in. Set aside

  6. Take most of spinach and steam for 3-5 minutes until bright green. Drain and set aside

  7. Divide dough into two halves. Take one half and roll out in rectangular shape until dough is 1/4-3/8 inch thick. Spread half of sauce on dough. Evenly sprinkle half of red pepper mixture, steamed and raw spinach, and artichoke hearts on dough. Evenly sprinke half of cheese. Roll dough, long edge first until it is rolled into a cylinder. Slice into roughly 18 1 inch slices. Place on greased cookie sheet and let rise for additional 20 minutes. Repeat with second half of dough and remaining toppings.

  8. Bake at 350F for 20-24 minutes. Cool on wire rack and serve war. Makes roughly 36 rolls, but the ends are small enough that each 2 ends are 1 serving for a total of 34 servings.
