Recipe Ingredients for Spicy Vegetable Quinoa

1 cup Quinoa
2 clove Garlic
0.5 Teaspoon Thyme
0.25 tsp Marjoram, Dried
16 oz Sweetpotato
14 cal Eggplant
9 oz Tomatoes
6 oz Green Bell Pepper
8 oz Onion Red
2 cup Chicken Broth
0.25 tsp Pepper, Red Or Cayenne
0.25 tsp Pepper, Black

Recipe Directions for Spicy Vegetable Quinoa

  1. Preheat oven to 450.

  2. line a large cookie sheet or jelly roll pan with foil and coat with cooking spray. Slice the sweet potatoes and green pepper, peel and cube the eggplant, and cut the onion and tomatoes into wedges. Place the prepared vegetables onto the foil-lined, sprayed pan and spray them lightly with cooking spray. Sprinkle black and ground red pepper over vegetables. Bake for 20 minutes or until vegetables are tender and browned.

  3. While vegetables are cooking, rinse the quinoa in water until the water runs clear. In medium saucepan, coat with cooking spray and stir together garlic, marjoram and thyme on low heat for 1 to 2 minutes. Add quinoa and cook additional 2 to 3 minutes. Increase heat to high; add broth and bring to a boil. Reduce heat, cover, and cook until water is absorbed, about 15 minutes.

  4. Place vegetables in a large bowl and fold in quinoa. Serve immediately.
