Similar to falafel, but you can add as many spices as you like.

Recipe Ingredients for Spicy Vegetable patties

32 oz chickpeas, drained and rinsed
1 c chopped cilantro
1 c. carrot, chopped
1 T garam masala or to taste
1 fresh ground black pepper to taste
1 t. ground red pepper
2 jalapeno peppers
2 c. spinach
1 lb. potatoes cut into 2 in sq.
1 chopped onion

Recipe Directions for Spicy Vegetable patties

  1. Combine first 8 ingredients in food processor. Process until smooth add some water or broth if too dry.

  2. Boil potatoes for 13 min. add unions and cook until potatoes are tender.

  3. Mash potato mixter with masher, do not put in processor they will be too gluey.

  4. add chickpea mixture and mix.

  5. Cover and chill 8 hrs. or overnight.

  6. Divide potato mixture into 36 small round balls. An ice cream scoop works well.

  7. Spray pan with cooking spray and cook patties until lightly brown on both sides.

  8. Serve with salad and or a pita with onion and hummus or tahini.
