These are the vegetables I had but you can use pretty much any root veg.

Recipe Ingredients for Spicy Vegetable and Coconut soup

2 small (1-3/4" to 2-1/2" dia.) Potatoes, Boiled
75 grams Carrots
0.5 small Onions
2 cup (8 fl oz) Water
1 Teaspoon Chilli Powder
200 grams Coconut Milk
6 fl oz Premium
1 medium raw Bell Pepper Red
0.25 tbsp Extra Virgin Olive Oil

Recipe Directions for Spicy Vegetable and Coconut soup

Fry veg in oil for a few minutes, add chilies and water. Boil til veg is soft. Blend til smooth then add coconut milk and heat through. Serve with salt and pepper as required.
