This is a belly cleanser - high in fiber, water, & spice

Recipe Ingredients for Spicy Vegetable Bean Soup

2 tablespoons olive oil
1 yellow onion
2 carrots
2 celery stalks
6 new potatoes
2 cups chopped turnip (not sure of exact type - I used 1 large, white, carrot shaped one)
3 red bell peppers
2 zucchini
2 hot chili peppers (1 green, 1 red - not sure of exact type I used, maybe dutch?)
1 habanero pepper
10 cups water (approximately)
1 cup dried beans (soaked in water first; a mixed assortment)
1 cup frozen spinach
1 salt
1 season salt
1 pepper

Recipe Directions for Spicy Vegetable Bean Soup

  1. Soak dried beans (they are ready once the skins go from smooth, to wrinkly, to smooth again) - this generally takes about 4 hours

  2. Chop up onion, carrot, celery (including the leaves), potatos, and turnip

  3. In a large pot, toss the first 5 vegetables with the olive oil, then sweat (put a lid on the pot and set it on a low heat) - probably about 10-15 minutes

  4. While the root vegetables are sweating, chop up bell peppers and zucchini

  5. Finely chop the hot chili peppers and mince the habanero pepper (recommend removing the seeds from all peppers first)

  6. Add all the peppers & zucchini to the soup pot, stir, and then put the lid back on and allow to sweat for another 10-15 minutes

  7. Drain & rinse beans

  8. Add beans, frozen spinach, and enough water to cover everything. Then stir and set to simmer for about 1-1.5 hours

  9. Season to taste with salt & pepper
