Recipe Directions for Spicy Udon Noodles

  1. Put vinegar, mirin, oil, and salt into a small bowl and whisk together to make a dressing. Set aside. Cook noodles according to directions on package. Rinse and drain well and transfer to a large bowl. Add parsley, sesame seeds, green onions, bell peppers and reserved dressing and toss gently to coat. Chill and serve.
