Awesome chili! NOTE: The beans are estimates for the correct calorie amounts, but they're each 2 15 oz cans of beans. Also, the 20 oz can of tomatoes is actually 28, but the calories were off with calorie count's pairing, so I had to put 20. Enjoy!

Recipe Ingredients for Spicy Two Bean Bulgur Chili

1 tbsp olive oil
1 onion, chopped
2 medium carrots, chopped
1 red bell pepper, chopped
3 jalapeño peppers, finely chopped and seeded
1 zucchini, chopped
1 yellow squash, chopped
20 oz crushed tomatoes, from can
3 cups water
1/2 cup bulgur
5 garlic cloves, minced
2 tbsp chili powder
1 1/2 tsp ground cumin
1 1/2 tsp ground coriander
1/2 tsp ground cinnamon
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
1 1/10 cup black beans
1 1/4 cup kidney beans

Recipe Directions for Spicy Two Bean Bulgur Chili

  1. Heat 2 tablespoons olive oil in heavy large pot over medium-high heat.

  2. Add onion, carrots, red bell pepper, and jalapeños and sauté until onion and carrots are almost tender, about 8 minutes.

  3. Add tomatoes, 3 cups water, beans, bulgur, white wine vinegar, garlic, and spices. Bring to boil. Reduce heat to medium-high and cook, uncovered, until bulgur is tender and mixture thickens, stirring often, about 20 minutes.

  4. Ladle chili into bowls and serve.
