Recipe Ingredients for Spicy Tomato and Spinach Soup with Roasted Red Pepper

1 tbsp olive oil
2 onions
3 cloves of garlic
1 carrot
1 medium tomato
1 roasted red pepper
3 cups tomatoes canned
3 cups vegetable broth
3 cups spinach
6 oz tofu

  1. Saute garlic, onions and carrot in oil.

  2. Add tomatoes, canned tomatoes, stock, pepper. Let simmer.

  3. Puree.

  4. Add in tofu and spinach
