Recipe Ingredients for Spicy Tomato Soup

1 tablespoon olive oil
1 cup chopped onion
2 teaspoons ground cumin
2 teaspoons mustard powder
1 teaspoon ground coriander
28 ounces fresh tomatoes
2 tablespoons tomato paste
1 tablespoon minced garlic
2 cups fat free milk
1 cup fat free chicken broth
1/2 cup lentils
1/4 cup chopped cilantro

Recipe Directions for Spicy Tomato Soup

  1. Heat the olive oil in a heavy pan over medium-high heat.

  2. Add onions and cook until they're softened, but not browned.

  3. Add the seasonings and cook 1 minute, or until fragrant.

  4. Add tomatoes, tomato paste, and garlic.

  5. Simmer for 4 minutes, until tomatoes are softened.

  6. Add the milk and broth and simmer for 4 minutes.

  7. Trasfer to a food processor and process until smooth.

  8. Return mixture to pan and add teh cooked lentils.

  9. Heat the soup and stir in cilantro.

  10. Season to taste with salt and pepper.
