Spicy tomato fish chowder makes a speedy main dish that is hearty and healthy.

Recipe Ingredients for Spicy Tomato Fish Chowder

3 tsp olive oil
2 cloves garlic
3 medium tomatoes
1 tsp dried basil
1/2 tsp dried oregano
1/4 tsp cayenne pepper
1/2 cup chicken broth
1/2 cup dry white wine
1/2 lb cod or other white fish
2 tbsp minced parsley
2 1/2 cup water

Recipe Directions for Spicy Tomato Fish Chowder

  1. In a heavy saucepan heat oil over medium heat

  2. Add garlic, tomatoes, basil, oregano, cayenne pepper and wine, cook uncovered for 10 minutes

  3. Add water and bring to a boil, reduce heat and simmer

  4. Mix in cod and simmer for 5 minutes

  5. Serve into bowls and sprinkle with parsley
