A savory and spicy sandwich filling that has healthful fats, lots of fiber, organic vegetable protein, and KETCHUP! Omit the ketchup if you want to taste the subtlety of the gorgonzola :)

Recipe Ingredients for Spicy Tofu Burger

3/8 lb. tofu, crumbled
1/3 cup organic brown rice, cooked
1 tbsp raw organic walnuts, finely chopped
1/2 cup onion, finely chopped
3 tbsp garlic, minced
1/3 cup jalapeno pepper, finely chopped
2 tbsp gorgonzola cheese, crumbled
2 tsp whole wheat flour
3 egg whites
1 tsp olive oil
1 dash black pepper
1 dash garlic powder
15 cherry tomatoes
1/2 dill pickle, sliced
1 cup raw spinach leaves
1/2 cup ketchup
3 tbsp mustard
6 slices whole wheat bread

Recipe Directions for Spicy Tofu Burger

  1. A food processor or chopper may be used to chop the walnuts, onion, garlic, and pepper.

  2. Add another jalapeno for more spice.

  3. Mix first 7 ingredients together.

  4. Add whole wheat flour and mix well.

  5. Beat egg white lightly to denature, then add into tofu mixture and stir well.

  6. Form into three to four balls, then press down to form a patty.

  7. Heat a cast iron fry pan with the olive oil until it sizzles.

  8. Place patties in the pan and fry on both sides until brown.

  9. Serve immediately on toasted bread or buns, adding sliced tomatoes, raw onions, pickles, and spinach or lettuce and ketchup, mustard, and/or fat-free mayonnaise to individual taste.

  10. Season to taste.
