Recipe Ingredients for Spicy Thai-style Veggie Fried Rice

1 c brown rice
1 c chopped broccoli
4 baby carrots
1/3 c chopped red peppers
1/3 c chopped green peppers
3 scallions
2 eggs
3 T sesame oil
1 tbsp minced ginger
1/2 tbsp chili paste
1/4 c fresh cilantro
1/2 tbsp salt
1/2 tbsp dried basil

Recipe Directions for Spicy Thai-style Veggie Fried Rice

  1. Prepare the rice according to the package. It should about triple in size.

  2. Chop the veggies and slice the carrots fine.

  3. Heat the sesame oil in a large skillet or wok and stir fry the veggies until about 1/2 done.

  4. Beat the eggs in a small bowl, and add to the pan. Cook until the eggs are done, stirring to scramble them.

  5. Add the cooked rice and spices, except the cilantro. Turn up the heat and and fry the rice stirring often to prevent burning.

  6. Once the rice has started browning, chop and add the cilantro. If you want to use fresh basil, add it now too.

  7. Stir everything to combine, and serve garnished with a lime wedge!
