Recipe Ingredients for Spicy Thai Spaghetti Squash

4 lbs spaghetti squash
1 tbl vegetable oil
1 tsp mustard seed
2 tbl unsalted butter
1/2 cup onion, chopped
2 tsps ginger, finely grated
2 tsps garlic, crushed
1 tsp cumin seed
1/2 tsp coriander
1/2 cup tomato, seeded and chopped
1 serrano pepper, seeded and minced
1 tsp kosher salt
1 cup cilantro, coarsely chopped

Recipe Directions for Spicy Thai Spaghetti Squash

  1. Heat the oven to 350 degrees. Cut the spaghetti squash in half lengthwise and place facedown on a cookie sheet. Bake for one hour or until tender and the squash shreds easily. Cool and shred the squash; set aside.

  2. In a large frying pan, heat the oil until shimmering hot. Add the mustard seed and cover until the seeds stop popping. Add the butter.

  3. Add the onions, garlic, ginger, cumin seed, and coriander. Saute until onions are tender, about 3 minutes.

  4. Add the pepper, tomato, and salt and cook until chili is fragrent and tomato is soft, about 1 minute.

  5. Add the squash and toss with the spice mixture until hot. Stir in the cilantro and serve immediately.
