Recipe Ingredients for spicy tagliatelle with creamy eggplant sauce

3 medium eggplant
2 tbsp olive oil
2 cloves garlic
1 tbsp thyme
1/4 cup basil
1/8 tsp salt
1/8 tsp ground white pepper
1/2 tsp paprika
3 tomatoes
14 oz whole wheat linguine
6 tbsp parmesan cheese

Recipe Directions for spicy tagliatelle with creamy eggplant sauce

  1. Boil eggplants for 4 min. Drain.

  2. Heat oil. Add garlic and thyme - 2 min. Add eggplant and simmer for 6-7 min, mashing gently with a fork. Remove from heat. Add half basil and season with SP and paprika. Chop in a food processor until smooth.

  3. Return eggplant cream to pan and add tomato. Cook until tomatoes have broken down and sauce is creamy.

  4. Cook pasta. Add 2-3T cooking water to sauce. Sprinkle with cheese and basil and toss gently.
