Recipe Ingredients for Spicy Sun-Dried Tomato Soup: Shrimp, White Beans & Swiss Chard

1 tablespoon Olive Oil
1 1/2 cloves garlic
1/4 tsp. red pepper flakes
1/2 medium onion
1 medium carrot
1/2 cup celery
1/2 cup zucchini
1 cup low sodium vegetable broth
15 oz diced tomatoes
8 oz white beans
1/4 cup sun-dried tomatoes
3 oz swiss chard
1/2 cup fresh basil
1/3 lb. shrimp
1/2 teaspoon rosemary
1/2 teaspoon thyme

Recipe Directions for Spicy Sun-Dried Tomato Soup: Shrimp, White Beans & Swiss Chard

  1. Heat oil in pan.

  2. Add Garlic, Red Pepper Fakes, cook 1 minute.

  3. Stir in Onion, Carrots, Celery, zucchini, Rosemary, cook 20 to 15 minuted or until onions are soft.

  4. Add Broth, 1/2 Diced Tomatoes, and beans.

  5. Scoop 1 cup mixture into blender, add remaining Tomatoes and Sun-dried Tomatoes.

  6. Puree until smooth.

  7. Stir mixture into soup and season with salt and pepper.

  8. Simmer 5 minutes.

  9. Add Shrimp, thyme and Swiss Chard.

  10. Simmer 5 minutes or until Shrimp is done and the Swiss Chard is wilted.

  11. Remove pan from heat, and stir in basil.
