Recipe Ingredients for Spicy Squash Soup

16 oz Squash, Winter, Butternut
1 1tsp Olive Oil
1 large(150 g) Onions
3 cloves Garlic
3 medium Carrots
5 cup (8 fl oz) Water
2 tbsp Honey, Strained Or Extracted
1 tsp Cinnamon, Ground
0.5 tsp Pepper, Red Or Cayenne
1 dash Salt, Table
1 dash Pepper, Black
8 tbsp Low Fat Sour Cream

Recipe Directions for Spicy Squash Soup

Poke the squash with a fork in a few places then bake in 350-degree oven for about 1 hour. Cut in half, let cool slightly, then remove seeds and scoop out flesh into a bowl. Heat oil in a soup pot over medium heat; add chopped onions and minced garlic and cook them until they're lightly colored, stirring occasionally. Add diced carrots and cook 2-3 minutes more. Add squash, water, honey, cinnamon, and cayenne and bring to a boil. Reduce to a simmer and cook 30 minutes, stirring occasionally. Working in batches, puree the soup in a blender or food processor. Add salt and pepper to taste (and more water if necessary to thin the soup). Serve each bowl hot with a dollop of sour cream or plain yogurt and minced chives on top.
