Women's Bean Project Sarah's Spicy Split Pea Soup Mix

Recipe Ingredients for Spicy Split Pea Soup

2 cups split peas, washed and drained
4 cups vegetable broth
4 cups water
2 tbsp butter
1 cup onion, diced

Recipe Directions for Spicy Split Pea Soup

  1. Wash and drain peas

  2. Add peas to broth and water

  3. Simmer uncovered for 1 1/2 to 2 hours

  4. Saute onions in butter until translucent

  5. Add curry, garlic powder, coriander, and crushed red pepper to taste

  6. Add milk or cream if desired

  7. Simmer 20 minutes more and serve.

  8. The simmer time is based upon an altitude of around 6000 feet.
