Very low fat, healthy, quick and easy lunch. A slice of whole wheat bread provides complete protein.

Recipe Ingredients for Spicy Spinach and Butter Bean Soup

1/2 cup canned baby butter beans, drained
1/2 cup nonfat plain yogurt
1 cup chopped frozen spinach
1/4 tsp curry powder
1 dash white pepper, opt
1 tsp lime juice
1 tsp grated parmesan cheese

Recipe Directions for Spicy Spinach and Butter Bean Soup

  1. Place butter beans, yogurt, spinach, curry powder, and pepper in a small sauce pan.

  2. Add 1/4 to 1/2 cup of water, to your preference.

  3. Over medium heat, bring to a simmer, stirring constantly. Cook until spinach is done, about 2 minutes.

  4. Remove from heat and stir in lime juice and white pepper.

  5. Transfer to a bowl and top with parmesan cheese.
