Recipe Ingredients for Spicy Southwestern Chicken Soup

2 carrots
3 g bay leaf
3 stalks celery
8 oz beer
1 lb sweet potato
1 lb yellow onion
2 cloves garlic
1 tsp. dried thyme
1 tablespoon extra-virgin olive oil
5 cups chicken stock
3 chipotle peppers
3/4 lb. chicken tenders

Recipe Directions for Spicy Southwestern Chicken Soup

  1. Peel sweet potato, carrots, and celery halve the whole sweet potato and slice into half moon shapes.

  2. Coat bottom of large heavy (cast iron) pot with EVOO, turn up heat to med-high after adding first layer of vegetables.

  3. Thinly slice onion and add to pot after potato and celery have been cooking a while (they take longer to cook)

  4. Mince two cloves of garlic and add to pot

  5. Add (one) bay leaf to pot

  6. Add salt to pot

  7. Add some ground black pepper

  8. Add 2-3 chopped chipotles

  9. Add 1-2 spoonfulls of adobo (sauce chipotles come in)

  10. Crumble in dried thyme

  11. Allow this to cook together for a few minutes

  12. Deglaze pan with some white wine or beer

  13. Add 5 cups chicken stock and raise heat to boil

  14. Cut up package of chicken tenders and add to pot to poach
