Burdock adds earthiness to this fresh and spicy soup base. [Whatever chili pepper you like is fine, or add dried chili flakes, etc, until you reach a heat that you enjoy.]

Recipe Ingredients for spicy soup base

1/4 cup (1" pieces) Burdock Root
3 clove Garlic
2 tsp Ginger Root
3 tbsp chopped Onions
3 oz Rice Vinegar
1 pepper Anaheim Chile
1/2 tbsp Honey, Strained Or Extracted

Recipe Directions for spicy soup base

  1. Finely dice chili (seeded or de-seeded, depending on hotness of the chili), onion, ginger & garlic. Place in a large soup-sized bowl and add thinly sliced washed burdock root.

  2. Add 3 oz of rice vinegar and 1 tsp of honey. Then add cold water until it *just* covers the vegetables in the bowl.

  3. Let sit til you're ready to flash-cook your soup. Then, toss it in with whatever veg you want, cover with cold water and cook on medium til your veg are ready to eat. I like adding canned tomatoes, fresh celery and sliced mushrooms. The burdock, vinegar and chile flavours balance out into a surprisingly satisfying mix of earthy-fresh-&-spicy.
