Revised version of Betty Crocker's recipe. Meant for two people. Double recipe to serve 4.

Recipe Ingredients for Spicy Skillet Chicken

1 teaspoon Chili Powder
1/4 teaspoon salt
1/4 teaspoon black pepper
16 oz boneless skinless chicken breasts
1 teaspoon vegetable oil
11 oz corn
1/8 cup green pepper
1/8 cup red pepper
1/3 cup chunky salsa
1 cup cooked white rice

Recipe Directions for Spicy Skillet Chicken

  1. In a small bowl, mix chili powder, salt and pepper; sprinkle evenly over both sides of chicken breasts.

  2. In a 10-inch nonstick skillet, heat oil over medium heat. Add chicken, cook 8 to 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut.

  3. Stir in salsa and vegetables. Heat to boiling, then reduce heat. Cover and simmer for 3 to 5 minutes or until vegetables are hot. Serve with rice.
