Shrimp & Spaghetti with garlic & oil

Recipe Ingredients for Spicy Shrimp & Spaghetti Aglio Olio

2 lb shrimp, peeled & deveined
2 tbsp lemon juice (about 1 lemon)
1/4 cup parsley, flat-leaf, chopped
1 tsp crushed red pepper flakes
4 cloves garlic, peeled & crushed
1 tsp salt, coarse
2 tbsp extra-virgin olive oil
1/4 cup extra-virgin olive oil
2 oz anchovy fillets
8 cloves garlic (large), crushed & minced
1/2 tsp crushed red pepper flakes
1/4 cup parsley, flat-lear finely chopped
1 lb spaghetti, whole wheat

Recipe Directions for Spicy Shrimp & Spaghetti Aglio Olio

  1. Combine 2 Tbsp EVOO with lemon juice, parsley, salt and 1 tsp red pepper flakes. Add shrimp and 4 cloves crushed garlic and cook about 3 mins. over medium high heat.

  2. Remove shrimp to warm platter.

  3. Return pan to heat and reduce heat to medium low. Add 1/4 cup EVOO. Add anchovies, minced garlic and pepper flakes to oil.

  4. Break up anchovies with back of wooden spoon until they melt away into the oil & garlic mixture.

  5. Toss spaghetti in the pan with parsley and the garlic oil, then season with a little salt to your taste.

  6. Top servings of spaghetti with spicy shrimp and serve.
