This dish is an appealing, affordable option for entertaining. You can subsitute 1 tablespoon fresh basil if desired for the dried basil.

Recipe Ingredients for Spicy Shrimp and Fettuccine

4 ounces fettuccine
1/2 tbl olive oil
1/4 tsp crushed red pepper
2 cloves garlic, minced
1/2 lb shrimp, peeled and devined
1 cup plum tomatoes, chopped (bout 3)
1 tbl reduced fat sour cream
1/2 tbl tomatoe paste
1/2 tsp dried basil
1/4 tsp kosher salt
1/8 cup fresh parmesan cheese, grated

Recipe Directions for Spicy Shrimp and Fettuccine

  1. Cook Pasta according to the package direction, omitting salt adn fat. Drain

  2. Heat oil in a large sauce pan over medium-high heat. Add red pepper and garlic to pan: saute 1 minute. Add shrimp; saute 1 minute. Stir in tomatoes and next 4 ingredients (through salt); bring to a boil. Reduce heat, and simmer 5 minutes. Stir in pasta; cook 1 mimute or until throughly heated.

  3. Place 3/4 cup pasta mixture on each plate; top each serving with 1/2 tablespoon cheese.

  4. Serve immediately.
