My take on the South Beach-friendly recipe with added veggies. This can be 4 smaller servings over brown rice or 2 large servings w/out rice.

Recipe Ingredients for Spicy Shrimp & Bok Choy Stir Fry

40 large Shrimp, Mixed Species
4 medium (4-1/8" long) Onions, Spring Or Scallions
2 clove Garlic
1 head raw Bok Choy
0.5 head, small (about 4-1/2" dia) Cabbage
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 1tsp Vegetable Oil, Canola
3 tbsp Soy Sauce
2 serving Chili Garlic Sauce

Recipe Directions for Spicy Shrimp & Bok Choy Stir Fry

  1. Peel and devein shrimp. Chop bok choy and red pepper in 1/2 inch dice. Thiny slice cabbage. Slice scallions and separate white from green. Mince garlic.

  2. In a large bowl, combine the shrimp, scallion whites, and garlic.

  3. In a wok or large non-stick skillet, heat oil over medium heat. Add shrimp mixture and cook, stirring occasionally, until shrimp turns pink and are cooked through, 3-4 minutes. Transfer to a large bowl.

  5. Return the pan to medium heat. Add bok choy, cabbage and red pepper, cover, and cook, stirring occasionally until crisp tender, about 4-6 minutes. Drain any liquid from the skillet and add bok choy to bowl with shrimp.

  6. Return the pan to medium. Add soy sauce and chili garlic sauce; stir to combine and bring to a boil. Add shrimp mixture and toss until coated. Cook briefly just to reheat. Stir in scallion greens.
