Recipe Ingredients for Spicy Shrimp and Bok Choy Bowl

3 tbsp vegetable oil
3 tsp crushed red pepper
4 cloves of garlic, chopped
1 ounce ginger root, peeled
1/4 lb shitake mushrooms, sliced
1 bunch spinach
1 cup clam juice
1 lb shrimp, peeled
1/2 lb vermicelli
4 scallions, shredded
32 ounce vegetable broth

Recipe Directions for Spicy Shrimp and Bok Choy Bowl

Heat a medium soup pot over med-high heat. Add vegetable oil, crushed red pepper flakes, garlic, ginger, mushrooms, and bok choy, then season with salt and pepper. Add vegetable broth (or chicken broth) and clam juice. Put a lid on the pot and bring soup to a boil. Add shrimp and noodles and cook 3 minutes. Add in scallions and cook another 2 minutes, then turn off soup and let it sit 2 to 3 minutes more. Adjust salt and serve.
