Recipe Ingredients for Spicy Scallop Pasta

3 oz. bay scallops, frozen then thawed
1/2 tbsp olive oil
2 cloves garlic, minced
1 1/2 tbsp lemon juice
1/2 tsp salt
1/2 tsp black pepper
2 tsp red pepper flakes
2 oz whole wheat pasta
1/2 cup canned pasta Sauce
1 cup fresh broccoli

Recipe Directions for Spicy Scallop Pasta

  1. Thaw scallops by running them under cold tap water for 60 seconds. Place thawed scallops in small bowl.

  2. Add olive oil, garlic, lemon juice, salt, pepper, and pepper flakes to bowl, mix until scallops are coated.

  3. Put water on for pasta. Marinate scallops in lemon mix for as long as it takes the water to boil. Preheat oven to 350 degrees F. Meanwhile, chop broccoli.

  4. When water is boiled, add pasta to the water, to cook according to package instructions. Throw broccoli into the pasta water for the last 1-2 minutes of cook time.

  5. When the pasta has reached a boil, pour entire contents of scallops bowl onto a baking tray, spread out the scallops until they are 1 layer thick. Bake at 350 for 10 minutes or until scallops are opaque.

  6. When pasta is finished cooking, strain, then replace pot on burner and heat marinara sauce (with another pinch of hot pepper flakes, if you'd like extra heat). Toss cooked pasta and broccoli with heated sauce, transfer to plate. Top with scallops. Enjoy
