Recipe Ingredients for Spicy Sausage and Lentil Casserole

400 g sausage
150 g shallots, peeled and halved
5 ml oil
15 g porcini , soaked and drained (reserve water)
150 g bacon , cut in strips
250 g beluga lentils
300 ml red wine
600 ml water
15 g thyme

Recipe Directions for Spicy Sausage and Lentil Casserole

  1. Soak mushrooms according to packet instructions

  2. Fry shallots and sausage in oil until golden

  3. Add bacon and cook for 1 minute

  4. Add lentils, mushrooms, wine, water (including mushroom-soaking water), and thyme

  5. Bring to the boil, then cover, reduce heat and simmer for 50 minutes, stirring occasionally

  6. Season casserole to taste

  7. Enjoy with crusty French baguette
