From Paula Deen Magazine, November 2008. For a smoother soup, puree in a food processor before adding half-and-half. Makes approximately nine 10oz servings.

Recipe Ingredients for Spicy Sausage and Caulifower Soup

16 oz Spicy Pork Sausage Patties
2 tbsp vegetable oil
1/2 cup all-purpose flour
64 oz chicken broth
2 heads cauliflower, trimmed
1 cup half-and-half

Recipe Directions for Spicy Sausage and Caulifower Soup

  1. In a large Dutch oven, cook sausage over medium-high heat for 5 minutes, or until sausage is browned and crumbles. Remove sausage, and reserve drippings in pan.

  2. Reduce heat to medium; add vegetable oil.

  3. Add flour, and cook, whisking to remove any lumps until light brown.

  4. Stir in chicken broth, whisking to remove any lumps.

  5. Add cauliflower, and simmer until tender and begins to fall apart.

  6. Stir in half-and-half.

  7. To serve, top each bown with desired amount of crumbled sausage.

  8. Garnish with Cheddar cheese and green onion, if desired.
